Johnnie Black's Green Enchiladas

Johnnie Black's Green Enchiladas (made for me by a good friend right after I had my son, Jonathan):

2.5 cups shredded chicken
2 cups (plus .5 cup) grated cheddar and jack cheese
small container sour cream (about 1 cup)
small can chopped green chiles
large can green enchilada sauce
package corn tortillas (grande size)
sliced olive
oil for frying

Preheat oven at 350 degrees.
Spread 1/4 sauce on bottom of large baking pan.
Combine first 4 ingredients in a large mixing bowl.
Fry tortillas in oil until a bit bubbly.
Fill tortillas and line in pan, seam side down.
Cover with remaining sauce.
Top with shredded cheese and sliced olives.
Back for 40-45 minutes.

  1. Making this tonight. I am adding tomatoes and red pepper to the filling. Looks yummy!!
