We LOVE homemade zuppa Toscana (just like Olive Garden!)
*I'm not a precise cook, so I'll do my best!*
1 package sausage (we love gimme lean veggie sausage)
2-3 medium potatoes chopped into 1/4" pieces
3ish cups of stock (enough to cover the potatoes, sausage, and kale)
1 bunch kale torn into bite sized pieces
1/4 cup heavy cream (1/2 and 1/2 also works, or plain coconut cream for vegan version)
Salt to taste
Pinch of red pepper flakes
Brown sausage in a stockpot, add potatoes and kale, add broth to cover.
Add red pepper flakes. Simmer until potatoes are soft and kale is
wilted ~30 min. Stir in cream.
*note: if you can trust your stove to
remain consistent in temperature, add the cream when you add the broth,
otherwise just stir in at the end. Adding it in the beginning makes it a
little more creamy, but if it boils your cream will curdle!
